Sweet Chili. A Dipping Sauce.

Sweet Chili

Ingredients

  • 1/4c white vinegar
  • 1/4c water
  • 1/2c sugar
  • 1 tsp chili powder
  • 1/4tsp salt
  • 1tsp cornstarch, dissolved in 1tsp water

Directions

  1. In a saucepan combine together the water, vinegar and sugar.
  2. Mix together until well blended. Bring to a boil without stirring until the sugar has been dissolved.
  3. Add the chili powder and salt and boil for 1 minute.
  4. Add the cornstarch and boil until syrupy.
  5. Let cool.
 

Kickin’ Chipotle. A Dipping Sauce.

Kickin’ Chipotle

Ingredients

  • 1/3c greek yogurt
  • 2tsp adobo seasoning
  • 1/8tsp ground chipotle
  • 1/8tsp paprika

Directions

Combine all ingredients in a bowl.

Peppered Apricot

Ingredients

  • 1/2c apricot preserves
  • 1 Tbsp spicy brown mustard
  • 1-1/2 Tbsp worcestershire sauce
  • 1 Tbsp apple cider vinegar
Directions
Combine all ingredients in a bowl.

Ka-Pow Mustard. A Dipping Sauce

Ka-Pow Mustard

Ingredients

  • 6 Tbsp yellow mustard
  • 2 Tbsp light corn syrup
  • 4tsp dry mustard
  • 1 1/2tsp white vinegar
  • 1 Tbsp mayonnaise
  • 1/2tsp sugar
  • 1/4tsp cayenne pepper

Directions

In a small microwaveable bowl, whisk together all ingredients.  Microwave on high for 30 seconds.  Whisk again.  Refrigerate 6 hours before serving.

Buckaroo Ranch. A Dipping Sauce.

Buckaroo Ranch

Ingredients

  • 3/4c mayonnaise
  • 1tsp dried parsley
  • 1/2tsp garlic powder
  • 1/2tsp onion powder
  • 1/2tsp dried dill
  • 1/2tsp dried chives
  • 1/4tsp salt
  • 1/4tsp pepper
  • 2 Tbsp hot sauce

Directions

Combine all ingredients in a bowl.

Sweet Roasted BBQ

Ingredients

  • 1/2c olive oil
  • 1/8c honey
  • 1 Tbsp spicy brown mustard
  • 1tsp ketchup
  • 1tsp sugar
  • 1/4tsp paprika
  • 1/4tsp salt
  • 1/8tsp pepper
  • 1/8tsp garlic powder
  • 1/8tsp onion powder
  • 2 1/2 Tbsp white vinegar
  • 1/2tsp barbeque sauce
  • 1/4tsp lemon juice
  • 1 egg yolk
  • 1tsp water
  • 1 Tbsp corn starch
Directions

Combine first 9 ingredients in a saucepan.  Stir over low heat for about 10-15 minutes (or until it becomes jelly-like).  Let cool for 10 minutes.  Once cool, whisk in white vinegar, barbeque sauce, and lemon juice.

In a separate bowl, whisk together egg yolk, water and corn starch.  Drizzle into mustard mixture slowly whisking the entire time.

Fiery Cilantro

Ingredients

  • 1/4c dried cilantro
  • 1c mayonnaise
  • 1 jalepeno pepper, seeded and chopped1/2tsp garlic powder
  • 1 Tbsp white vinegar
  • 1tsp sugar
  • 1/8tsp cayenne pepper

Directions

Combine all ingredients in blender.  Pulse until combined.

This week, we’re “dipping” into something a little bit different.  It’s Eve’s turn to cook and one of her most favoritist, most awesomist, most specialist things in the world to Eve is dip.  You can give her anything to eat and as long as she has something to dip it in, she’ll eat it.  Her most favorite is ranch, but we’re broadening our horizons this week and trying several different dipping sauces to go with these homemade chicken nuggets that I’ll be whipping up.  We came up with so many dips that we decided to let Ian have a go at it too.  We split the dips between both kids and I also let each kid create their own recipe just for fun.

If you are going to attempt all of these recipes, I would give yourself a few days.  We worked hard on this for about 6 hours.  If school hadn’t let out early and dance class hadn’t been canceled I don’t think we would have had time to get them all done in time.  Also, if you don’t have all of these ingredients it could cost a bit to do this many at once.  I had 90% of the ingredients already, so it really didn’t cost us too much at all.  It was so much fun.

I had the kids take turns on the dips and let them choose which ones they wanted to make.  They were sooo excited and so proud of the recipes they created.  I saved that part for last so they would have something to look forward to at the end.  Also, so they would know what all of the different ingredients tasted like by the time we got to it.  They learned that they had to add a “base” before you could make a dip out of it.  Also learned which ingredients were sweet and which ones were spicy.  A very cool learning experience for the kids and I can honestly say both of their dips turned out very good.  Better than most on the list.

Honey Mustard

Ingredients

  • 3/4c mayonnaise
  • 3 Tbsp honey
  • 2 Tbsp yellow mustard
  • 1tsp lemon juice
  • 3/4tsp orange juice

Directions

Combine all ingredients in a bowl.

 

Marinara. A Dipping Sauce.

Marinara

Ingredients

  • 1/2 Tbsp olive oil
  • 1 (6 ounce) can of tomato paste
  • 1 (10 ounce) can of diced tomatoes, undrained
  • 1 (8 ounce) can of tomato sauce
  • 2tsp of sugar
  • 1tsp of chopped fresh basil
Directions

Heat the olive oil and add the tomato paste in a pan over medium heat for about 3 minutes.  Stir in the diced tomatoes and tomato sauce.  Bring to a boil. Reduce heat, add the sugar and simmer for 15 minutes, mashing the tomatoes and stirring occasionally. Let cool.
